The Alpine Cookery Course - Chalet based cookery training for season workers

The Alpine Cookery Course is designed to equip future chalet hosts and season workers with the cookery skills and knowledge to run a chalet in a winter ski resort.  You will gain valuable experience and develop your skills to enable you to secure a job within the industry.

The aims of the course are to improve your cookery skills so you can confidently cook a weekly chalet menu of breakfast, afternoon tea and a 3 course evening meal.  Most importantly your practical cookery skills will be developed in our cookery sessions, coupled with theory and demonstrations you will gain valuable knowledge of the ins and outs of how to run a chalet. 

We have a maximum ration of 8 students to 2 tutors to ensure plenty of contact time and help throughout the week.  Our kitchen facilities are excellent offering all students plenty of individual work space.  Our relaxed and fun teaching atmosphere enables each student to develop as the week goes on, we encourage team work and for each person to share their food and previous experience with the rest of the group to enable all to benefit from each other’s knowledge.

Our theory sessions will make sure you are well prepared for all aspects of chalet life from menu planning, budgeting, cleaning, time saving tips and guest management.  We cover meals for children and dishes for food allergy suffers and special diets.  As well as using local ingredients you also get to experience using food stuffs packaged and labelled in another language. 

During the week you have free time in the afternoons to enjoy the beautiful surroundings of Chamonix and any outdoor activities you wish.  The course does involve long hours but you have some free time for sightseeing, shopping or just relaxing in the sun.

We do not incorporate a Food Hygiene Certificate into the course as we prefer to focus our time on the practical cooking; many companies now offer this as part of their in resort training programme.  If you wish to do a course there are a number of locations in the UK where you can do the CIEH Level 2 Certificate.
